Humble Beginnings - the Brekky Booth story so far...

The Brekky Booth started in Denver in 2023, as a little side project I built while working full-time as a bartender. I’ve always loved cooking and feeding people, and what started as a weekend venture slowly grew into something I knew I wanted to take more seriously.

Eventually, I found myself feeling a pretty strong pull toward Portland. There was something about the city and its food-loving, community-minded spirit that felt like the right place for The Brekky Booth. I had a feeling Portland would get what I was trying to do, so I packed up and made the move.

After arriving in Portland, I wanted to bring something a little more personal to the menu. In 2025, I started making savory New Zealand-style meat pies as a passion project. Growing up in New Zealand, pies were always a familiar part of life, and making them gave me a chance to share a little piece of home with the people I was meeting here. They quickly became one of my favorite things to make and an important part of what The Brekky Booth has become.

Since moving to Portland, The Brekky Booth has grown from a weekend side hustle into a business with a community of regular customers and friends I've met through farmers markets around the city. I'm incredibly grateful to everyone who has stopped by for a sandwich, tried a pie, or simply told someone else about us.

And now, after a few years of early mornings, farmers markets, bartending shifts, and figuring things out as I went, I'm about to do something I've been dreaming about for a long time: open a permanent home for The Brekky Booth.

I'm incredibly excited to bring our food to the neighborhood every day, build something that people can feel a part of, and become a more permanent member of the Portland community.
